He Built the Brand Before He Sold a Single Slice
One of the first things I asked Dante when he sat down with me on Beyond the Plate with Carol -- Episode 6 was how Dead Proof actually started.
And what he shared really stuck with me.
Because this didn’t start the “normal” way.
There was no storefront first. No soft opening. No hoping people would just show up.
He built the brand first.
The logo. The photos. The energy. The presence.
Before a single pizza was ever sold.
And I mean… that is bold.
But here’s the part that really got me -- people were already talking about it like it existed. Reaching out like they had experienced it. That tells you everything you need to know about how powerful intention is when it’s done right.
The Moment Everything Changed
There’s a deeper layer to this story, and I’m really glad we talked about it on the podcast.
After losing his father in 2018, Dante found himself asking a question that, honestly, a lot of people avoid:
Am I doing what I’m actually meant to be doing?
He was successful in tech sales. On paper, everything looked good.
But it didn’t feel right.
And instead of ignoring that… he did something about it.
He bet on himself.
Sold his house. Took the risk. Went all in.
And I’ve been doing this for 39 years, I can tell you, those are the moments that define everything that comes after.
It Was Messy Before It Worked
We talked about this on Beyond the Plate too, and I loved this part of the conversation.
Because the beginning? It wasn’t polished.
It was chaos.
Their first big event wasn’t even pizza, it was tacos at Taco Tour. No systems. No real roadmap. Just figuring it out as they went.
And honestly… that’s the part people don’t see.
Everyone sees the lines now. The hype. The brand.
They don’t see the figuring-it-out phase.
But that’s where everything is built.
That’s where the identity comes from.
This Is Not Your Typical Pizza Place
Okay -- let’s talk about the food for a second.
Because wow.
Yes, you’ve got incredible pizza. Neapolitan, Sicilian, all rooted in his East Boston background.
But that’s not where it stops.
Crab Rangoon pizza.
House-made everything.
Rotating menus.
Chicken tenders that sell out almost immediately.
I mean… come on.
This is not playing it safe.
This is someone saying, “What if we tried this?” and then actually doing it.
And you can hear him talk about that creativity throughout Episode 6 of Beyond the Plate with Carol. It’s not random. It’s intentional.
That’s the difference.
Hospitality Comes First - Always
This was the line that stayed with me the most.
“I’m a hospitality business first.”
That says everything.
Because food might bring someone in once.
But how you treat them? That’s what brings them back.
And Dante gets that.
If something goes wrong, he owns it. If a customer isn’t happy, he fixes it. No excuses.
That mindset is rare.
And after 39 years at Red Arrow, I can tell you, you know when someone really understands hospitality… and when they don’t.
He does.
The Community Around It Matters Just As Much
Another thing we talked about on Beyond the Plate with Carol is the role of community in all of this.
And I love this part of the story.
Other restaurant owners showing up. Supporting each other. Trading food. Sharing ideas.
That’s what this industry is supposed to look like.
It’s not competition all the time. It’s collaboration. It’s respect. It’s building something bigger than just your own four walls.
That’s what makes places like Manchester special.

If I had to sum this whole conversation up, it would be this:
This is someone who made a decision most people are too scared to make.
And then backed it up with the work.
The risk.
